Masala Nuts & Pineapple Juice

Last weekend was good or that what I can say. I went for shopping on Friday, Saturday grocery shopping and Sunday at home. And now back to square one ie come to office, why weekend has to disappear so fast?? Well for the Monday to come I guess..

Anyways today I’m posting very simple recipe of masala nuts which I made as evening snack.

Ingredients:

Cashew nuts – 1/4cup
Almonds – 4 tbs
Salt – ½ tps
Black Salt – ½ tps
Red chill powder – ½ tps
Cumin powder – ½ tps
Oil/butter – 1tps

Method:

1. In a pan dry roast cashew nuts and almonds separately and keep aside (any other nuts can be added too)

2. In the same pan add the oil to heat. Now add the nuts and fry them with all the other ingredients for 5-7mins or until nicely roasted.

3. Let the masala nuts come to room temperature before severing for better results.

4. Masala nuts with Apple Alovera juice are nice combo to try.

When we went for grocery shopping I brought pineapple as it was long time we ate this fruit. BIL prepared Pineapple juice for Kedar, he used honey instead of sugar & here the recipe goes

Method:

Fresh pineapple chunks - 7-8 large
Honey - 4-5 tbs
Ice cubes - as desire

Blend all the items in a blender or mixi for 2-3mins. Super cool pineapple is ready.

Pani Puri and tagged again !

On Sunday I prepared pani puri for Kedar as pani puri is his favorite (as a matter of fact I guess most of people love pani puri !!) hmm let me correct it...I prepared the readymade pani puri ..hehe. So no big recipe here.....use the packed one's from mustafa and just prepare the potato filling.

Boil potato, mash it and add redchilli, salt & cumin powder, mix well. I also used boiled channa for the filling.

Fill the potato mix in puries.

For the rest of items just follow the procedure in the pack :-) & Pani puri is read to eat !

Banana Cake

Last Saturday I these cake.
I did few changes in the recipe and here it goes:

Ingredients:
Wheat flour – 1 cup
All purpose flour – ¾ cup
Butter – 2tps
Milk – ½ cup
Ripe banana mashed – 1cup or 2 bananas
Sugar - ½ cup
Raisins – 1tbs
Almonds – ½ tbs
Baking powder – 1tsp

Method:
1. Preheat oven in 200C
2. Mix all flour, baking soda, and banana pulp and keep adding milk in small quantity.
3. Add sugar and beat to form a smooth paste.
4. Add 1tps of butter and beat for 2min.
5. Dust a baking dish with 1tps of butter and flour.
6. Pour the mixture into baking dish & garnish with raisins and almonds

7. Bake in 200C for 35mins or until golden brow. In the center use a fork to check if the cake is done.

8. The fork has to come out clean. If not, bake for 10mins.

Jeera Rice & Alu Gobhi

ere is second part of my rasmalai adventure. Along with my so call rasmalai I have also made Jeera Rice from Vani’s blog and modified Shahi Panner to Shahi Alu Gobhi ie replace paneer with Potato, Cauliflower and peas. But this time Jeera Rice & shahi alu gobhi was yummy. Especially the Alu gobhi gravy was very nice and made a very good combo with jeera rice.

Besan Puri & Mint Chutney

The other day I was alone at home enjoying myself, sofa and tv when the clock tick 7.30pm! Oh dear time to make dinner as everyone will be coming back from their ventures to disturb me, my sofa and tv mood :) I was really not in a mood to cook anything but something simple, easy and FAST! After lot of thinking I decided to make Besan Puri, my mom use to make these for our lunch box during school days. Most of my classmates use to bring besan pori as lunch box too and we use to have fun sharing, eating! Ahh good old school days.
Whenever I use to visit my friends place they will make this for me and I use eat lovely, hot besan puri happily. I started my own version of besan puri very long back but that was not really my mom’s type. I use to make besan puri for my other sis, whom always asked me to cook whenever she wanted to eat besan puri or besan gatta and now she is pro in both the dishes and makes better than me!!
Some time back when I went to Chennai I stayed at my sis place for 1week and daily she use to make different dishes or whatever I wish for ..hehe. One day she made besan pori and taught me the proper way of making it.(that’s why I said I have this sisterly feeling towards Vani cause she is just like my sisters …always pampering ) And ya my Jiju will also prepare dishes for me :).

Ingredients:
Beasan/ Gramdal flour – ½ cup
Saunf – 1/2tps (a must for this dish)
Redchill powder – 1tps
Salt to taste
Oil - 4-5 tbs to mix filling
Oil – for making parathas
Flour – 1cup
Water
Method:
1. Mix besa, saunf, chilli powder, salt and oil together well. Rub the besan mix between palms to make it fine powder.

2. Use 2-3tbs of water only if required, I didn’t use any water for the filling mix.
3. Make dough from flour and water as for any paratha we make.
4. Make small balls of dough, make a cup shape from the balls and fill 1tbs of besan mix in that, seal it and roll them into thin roti.

5. Heat a tawa or griller and cook the roti both side until golden brown apply oil/ghee.

6. Hot, Spicy besan puri is ready to eat.
7. Server with curd, pickle, any vegetable, curry, chutney or with tea.

Lauki Dal or Dudhi dal is one of those recipes which I prepare when I’m in hurry to finish cooking or don’t want to cook anything or simply cause there is lauki at home. The recipe is simple and easy resulting in delicious dal and the big advantage is you really don’t have to cook any vegetable, without any side dish or sabji also our loyal lauki/dudhi dal will taste just yummy. There are few version of making lauki dal in my home we prepare lauki with various dal and in different ways.


Dates Ladoo and an Award

As per the rule I have to write up about my favorite desserts, so am posting this:

My favorite…and means favorite is Rasmalai and Mottichor laddu or Mottichor pak..and I just love these. Thinking of these things make my dil goes mmm mmm mmm…

Na, I’m not big fan of chocolates but I like dairymilk’s fruit & Nuts pack.

Last week in Vani posted Rasmalai and tempted everyone. So out of temptation I tried to make rasmalai the same day as she posted for the first time and wait.....no it’s not what you guys are expecting….It came out pity bad..Malai was so hard….I wanted to cry my heart out…my favorite rasmalai and I can’t make it properly…how sad!! But Vani dear has promised me that she will show the procedure (live) and make for me rasmalai…now that’s gives a bit of relief!!

I followed the same procedure as in Vani’s blog and here is the result.


Since had dates box lying in the fridge for a while now I immediately thought of making it & used dates, Almonds, Cashew nuts, Raisins as I had these at home and sprinkle little of Sesame.

I tried making chakki, but the cutting part was having issues!!

So, I settle myself with making ladoo & tasty, yummy ladoo ready to eat.



Aloo Paratha Recipe



W
hen Nupar announced the theme for July is Less is More I was pity excited, the more exciting part is the Logo of the event which looks so warm, fresh and wonderful. At least for the sake of the logo I had to participate in the event.

If there is nothing at home or one doesn’t feel like cooking much and still want something good to eat then I guess the answer is Aloo Paratha and that’s what we did. As Srivalli has freshly done the roundup of Roti Mela (an amazing round one must say), I quickly browse through the blogs of various people for aloo paratha and found one simple yet very nice recipe. I have few version of making aloo paratha and Anitha’s was similar to what I had in my mind.

Yummy aloo parathas are ready



Ingredients:

For Dough
Wheat Flour - 2 Cups
Salt - 1/2 tsp
Oil - 2 tsp
Water - To knead
Oil/Ghee- For Frying

For Stuffing
Potato - 3 large
Green Chilli - 2-3
Coriander Leaves - 2 tbsp chopped
Cumin Powder - 1/2 tsp [optional]
Garam Masala - 1/2 tsp
Salt - To Taste

Method:
1. In a large bowl or plate take flour add salt, oil and mix well. Add water in small quantity and prepare a soft dough.  Keep aside for 15 minutes or until required.

2. For Stuffing boil potato peel and mash it well.  Finely chop chilli, coriander leaves and add with mashed potato along with cumin and garam masala powder, salt and mix well.  Divide potato masala in equal portion of 6-7 and make it into smooth ball.

3. Divide dough in to small portion of 6-7 and make a smooth ball, flatten it and roll into 3" roll, add one potato masala ball and bring all the edges of roti together to seal dough properly.

4. Flatten it again carefully, dust with little flour and roll gently into medium size paratha.  Repeat same for rest of dough.

5. Heat a tawa or griller and add paratha and cook until bubble appears around 1-2 minutes and flip the paratha.  Apply  1-2 tsp of oil or ghee all over paratha and flip again to apply oil/ghee on another side.  Cook until both sides is golden brown.   Repeat same for rest.

Serve hot with curd, pickle or any side dish of choice.

Chawal Ka Gatta & MEME

I have made chawal ka gatta after very long time. As there was left over rice I thought of making chawal ki roti but I was not really in a mood to make rotis, then the thought stuck my mind why not make gatta but I had my reservation, I was thinking whether Kedar and BIL will like this but then I decided if they don't like there is instant roti :-). Once the gatta got boiled Kedar gave me a looks and said I'm not going to eat this. I asked him to try it and if he doesn't like then I will make something else (kya kya karna padta hai!) after lot of sweet talking he did try and loved it I guess, that's why he ate heartily chawal ka gatta! In fact everyone did liked it...so don't worry go ahead and try this recipe :-)
This gatta makes a good breakfast, lunch, dinner or snack item & can be server with pickle, tea, any sabji or chutney.
For Ingredients refer chawal ki roti recipe, it's the same ingredients additional things required are:

Semolina/Sojji/Rava - 2-3 tbs
Cumin Seeds - 1/2 tps
Mustard Seeds - 1/2 tps
Curry leaves - few
Coriander leaves chopped - 2-3 tbs
Green chill chopped - 4-5 (according to taste)
Oil - 3-4 tbs
Water - 4 cups for boiling

Method:

1. Mix all the ingredients (as per chawal ki roti exclude oil and water), Semolina. Add water only if required to make hard dough. I have added 2-3tbs of water.

2. Make medium size balls of dough and roll them between palms to make sausage kind of shape.
3. Boil these rolls in hot water for 20-25mins until it's gets cooked nicely.

4.Use a knife to test. Once done, nice aroma will start coming.
5. Drain the water and cut the rolls in to small pieces.

6. In a pan heat oil, add cumin, mustard seeds, greenchilli, curry leaves. Add the boiled gatta and mix well. Sauté for 8-10mins until gatta pieces turns in the brown colour, garnish with chopped coriander leaves
7. Chawal Ka Gatta is ready.

8. Server with mint chutney (will post chutney recipe later).

It's been hardly a month since I have started blogging and visiting others blogs & now I guess am hooked to it.
