Beetroot Halwa RecipeBeetroot halwa is one of the delicious halwa, if you follow my blog you would know my love for beets I have quite a few beetroot recipes already blogged but beetroot halwa was missing for long time I wanted to post this but somehow it was not happening until this time when I made it I decide to take pictures.  Today special halwa is to celebrate 5 years of blogging of Indian Khana and trust me it's just like yesterday it all started.  Also this happens to be 450th post of this blog.
I never thought I can come this far but then this happened to due the support I got through readers, bloggers friends, friends and family.  Whenever I take a break with no so enthu of starting blog again then few friends push me to do it.  There is lot to say but the bottom line is it has be amazing journey and totally fulfilling the most important thing is we learn a lot and I am still learning new things each passing day.  So celebrate this big occasion something has to be sweet right and this beets halwa just fits the bill.  If there is anything to describe this halwa then it's one word - delicious.

It's very easy and takes little time but then it's worth every minute we spend.  I did beetroot halwa in pressure cooker to cut down cooking time but still I make sure to saute the beets well and thus you won't find any difference in taste whether it's cooked in open pan or pressure cooker.  If you want to make this halwa more rich then add little khoya instead of condense milk and that's takes the halwa to all new level. Also I used little ghee but that was quite enough if you wish you can add more ghee to suit your needs and taste bud.

Ingredients:
Beetroot - 2 large [or 5 cups loosely packed]
Ghee/Clarified Butter - 2 tbsp +1 tsp
Milk- 1& 1/2 Cups
Condensed Milk - 1/2 Cup
Sugar - 2 tbsp [or to taste]
Fresh Crushed Cardamom - 1/2 tsp 
Cashew nuts - 10-12 tsp
Almond Slivers - 1 tbsp
Pistaachios Slivers - 1 tbsp

Method:

1. Peel, wash  and grate beetroots.

2. In a pressure cooker heat 1 tsp ghee and roast cashews until golden brown, remove and keep aside.
3. Now heat remaining ghee add grated beets and saute for 8-10 minutes or until raw smell disappears.
~ This is important to get nice taste and texture in halwa, saute quite well don't be in a hurry to add milk.

4. Add milk mix well and pressure cook for 1 whistle off flame and allow cooker to released pressure.
~ If using futura wait until steam release slow flame and simmer for 2-3 minutes off flame.

5. Open cooker and mix well, halwa will be skill milky and not completely dry so don't worry about it.
6. Keep cooking in high flame with regular stirring until halwa becomes almost dry around 10-12 minutes.
7. Add condensed milk and mix well and cook for 2-3 minutes.

Now add sugar and cook again for 5 minutes.
~ Once we add sugar halwa will be watery again due to sugar so just keep cooking and stirring.
9. Add fried cashews, cardamon powder and mix well. Cook until halwa is totally dry and starts to leave ghee another 10 minutes.  Add almonds and pista (keep little aside for garnishing) mix and off flame.

Garnish with almonds and pista and serve hot/warm or cold, it taste delicious either way.
