Phalahari Rajgira Paratha or Rajgira Ka Thepla is easy rajgira atta recipe suitable for fasting/vrat. Normally for singhara, kuttu and rajgira paratha, puri is made with potato using as binding agent but here I didn't use any potato so all those people like to avoid potato this is great recipe for upvaas as most of the vrat recipes revolves around potato :) This parathas are tasty and it taste yum even if cold so you can even make this for lunch box if you or family member working during upvaas.


This Rajgira Paratha calories as low as I used oil and not ghee plus it's not fried as puri so of course that's a plus point. The recipe is very simple with just few ingredients and you have delicious paratha ready to serve. This is my first rajgira flour recipe and finally I have manage to post Rajgira (amarnath flour) recipe, feeling delighted :).

I know what's so great about posting rajgira recipe right, but getting here rajgira, singhara and kuttu flour is very difficult if we are lucky some time time can find it and since these flours shelf life is very less we can't bring from India and store for long too :( Anyways that's not the issue here we are going to focus on our paratha only for now :)

I served this paratha with fresh homemade curd, tamatar dhainya chutney and singhara halwa for a complete meal. Try this during Navratri or any vrat this low calories, gluten-free, vegan rajgira paratha or you can make this any day don't have to wait for only fasting :)

Rajgira Ka Paratha | Rajgira Thepla Recipe

Glutenfree, vegan phalahari rajgira (amaranth flour) paratha for Navratri fasting or vrat.

Ingredients:

  • 1 Cup - Rajgira Atta/Amarnath Flour
  • 1 Cup - Grated Carrot
  • 3/4 tsp - Cumin Powder
  • 1/2 tsp - Chopped Ginger (optional)
  • 1/2 tsp - Fresh Pepperpowder
  • 1 tbsp - Chopped Coriander Leaves
  • 1/2 tbsp - Oil
  • To Taste - Rock Salt/Sendha Namak
  • 1/4 Cup or as required - Water
  • To Cook - Oil/Ghee

Method:

  1. Peel and grate carrot, in a large bowl or plate take rajgira atta, grated carrot, cumin powder, pepper powder (use fresh if possible), sendha namak, coriander leaves, oil, ginger and mix well with hand. Now start adding water in small quantity and make a dough, be careful with water, add less.

  3. Divide the dough into equal portion, grease hand with oil and roll one portion of dough into ball and flatten it, now just this with rajgira atta and roll gently into paratha, it will be thicker than roti and do this gently or avoid paratha from breaking, keep adding dry flour as required.
  4. Paratha will break which you can seal and roll again using dusting flour, if not just great hands with oil and pat dough between hands to shape it into paratha, it will be thicker and small if patting between hands. You can see I have the last picture with one rolled paratha and one patted in hand.

  6. Heat a tava or skillet and place rolled paratha, cook in medium heat for a min or until light brown patches starts to appear. Flip the paratha and apply oil or ghee, turn again and apply oil/ghee on another side, cook for another minute or until both sides gets cooked well. Repeat for rest of dough.
  7. Falahari-Rajgira-Paratha-Thepla

Serve hot or warm with curd, aloo sabzi, chutney, arbi sabzi or anything of your falahari choice. I had it with curd and tamatar dhaniya chutney, also had it with tea as I like tea and paratha combo :)

Notes
  • You can avoid ginger if you wish
  • Take care while rolling, add dusting flour well and be gentle, don't apply too much pressure
  • Using ghee to cook the paratha/thepla for sure enchace the taste
  • You can add 1 large boiled and mashed potato too if you wish
