Dates Cake, eggless, butterless date cake makes excellent tea cake or a quick breakfast cake or even dessert. Hope all of you had great start of the year and wishing everyone again a very Happy New Year and to start this year of blogging on sweet note here is simple yet delicious date cake recipe.  This dates cake recipe is very easy just mix the dry ingredients, wet ingredients and bake and we don't need any special gadgets also a bowl, spatula or wire whisk is enough to make this moist and delicious cake. 

I know it suppose to be the Millet Friday but then not starting a year on a sweet note wouldn't be good isn'tit?  Though I wanted to make something sweet with millet but I didn't manage to do that.  I baked this cake for dear friend Sonal to celebrate her birthday and surprise cake from my side but it wasn't suppose to be that I guess as we couldn't meet and we end up celebrating Christmas with this delicious dates cake and some muffin that I baked along as they say Dane Dane Pe Likha Hai Khanewale Kaa Naam :) The pictures were suppose to be surprise for her too that's why there's also gift box :)  This is very good cake for being egg-less, butter-less as it's very moist, soft and just perfect, exactly like a cake suppose to be.

Instead of using round baking pan I used my beautiful bundt pan which was long due to use a wonderful gift that I got from my sister-in-law, it's a very beautiful bundt pan exactly like I wanted in amazing blue color that makes the tin looks so nice I didn't use it for long just adoring it ;)

As you can see the cake looks just perfect and moist infact I am so amaze how good the cake turn out and the cake taste better the next day, so if you bake it in night have it next day or a day later then it taste just more delicious as all the flavors gets settle specially the spices.

This is my basic cake recipe that I use for most of the eggless cake while using oil, we can also make this cake with wheat flour or use half of wheat flour and half of maida, since this time it was made to gift I didn't use wheat flour but you sure can the cake looks moist and delicious either way.

You can also add any dry fruits of choice, chop it and add along chopped dates. You can use walnut which goes so well with dates or cashew nuts, almonds, pine, raisins, hazelnut, macadamia just anything you wish or use mix of nuts to have good crunch, I wanted only the dates flavor so I ignore the nuts this time. Eggless Butterless Dates Cake Recipe

Moist, soft and delicious eggless, butterless Dates cake.

Makes:8 inch Cake


Ingredients:

  • 1 & 1/2 Cups - All Purpose Flour/Maida
  • 2 tsp - Baking Powder
  • 1/2 tsp - Baking Soda
  • 1/2 tsp - Cinnamon Powder
  • 1/2 tsp - Nutmeg Powder
  • 1/2 tsp - All Spice Powder [optional] 
  • 1/4 tsp - Salt
  • 22-25 - Dates
  • 1/2 Cup - Brown Sugar
  • 1/2 Cup - Oil (I used Saffola)
  • 1 Cup - Milk
  • 1/2 tbsp - Flax Seeds

Method:

  1. Preheat oven to 180C (for 10 mins), meanwhile coarsely grind flax seeds and soak in 1-2 tbsp of water, keep aside for 10 mins or until needed.
  2. Sieve all the dry ingredients like all purpose flour (maida), baking soda, baking powder, salt, cinnamon powder, all spice (if using), nutmeg powder (I used freshly granted nutmeg) and keep aside. Pit and chop dates, keep aside too.

  4. In a mixing bowl add milk, brown sugar and mix well until sugar dissolves. Now add oil and mix again to combine. Add chopped dates and give a quick mix.

  6. Add 1/3 of flour and mix to combine well without any lumps, do this again in 2-3 batches for remaining flour. Now add the soaked flax seeds and mix well to combine.

Grease a 8 inch round cake pan well and dust with flour, tap inverted pan 2-3 times to remove the excess flour (I used a bundt pan here), add batter, level the top and bake for 30-40 mins or until a tooth pick inserted in center comes out clean, mine got baked in 25 mins so after 25 mins check the cake if not done then check after 5 mins, do this until you get clean tooth pick.
  9. Once the cake is baked, cool on a wire rack for 5 mins, invert the cake pan to remove the cake and allow it to cool completely on wire rack. If you cake is not coming out of the pan gently run a knife all around the pan edges to loosen the cake.
  10. Eggless-Dates-Cake-Recipe

Serve it as snack along with tea or coffee or have it as dessert, option is yours. We love to have it as both :)

Notes
  • Have all the ingredients at room temperature, specially dates.
  • You can also puree dates with little milk and then mix remaining milk, sugar it will help to enhance the cake color. But I prefer having chopped dates pieces in cake taste wonderful while eating, option is yours.
  • All spice powder is purely optional, if you don't have that then ignore it.
  • Adding fresh grated nutmeg enhance the cake flavor to very much but you may feel strong nutmeg flavor in cake which will be fine by next day.
  • You can make the cake with half of maida and half wheat flour.
  • You can add any chopped dry fruits of your choice 2-3 tbsp or 1/4 cup
