Paniyaram is something which was not a norm in my parents place my mother never made it.  Idli, dosa were the things we used to relish as South Indian food or sambar some times and rasam when we used to be sick.  I started to learn about paniyaram after having South Indian friends more than North Indian ones, served as tiffin or breakfast these tiny dumplings made of idli batter is soft inside and crunchy outside, I always liked the name Paniyaram it's sounds so good I think :)

Around a decade back Sri Krishna sweets once used to serve good hot paniyaram during evening time along with other traditional Tamil snacks but lately the quality dropped nor I see most of the branches serving same now.

Coming back to our paniyaram this is masala paniyaram little on spicy side there's also plain paniyaram, Chettinad style paniyaram, sweet paniyaram etc  In case you don't know what's paniyaram then it's more like dumplings made of idli batter in various type as listed above.  It's one of the great way to use leftover or sour idli batter just spice it up with few extra ingredients and you have tasty snack or breakfast ready.

If you look for easy and healthy snack/tiffin or breakfast idea then it's fits the bill.  To jazz it more if you wish and add vegetables like tomato, capsicum etc, it's also good as kids lunch or snack box too.

Serves: 4-5

Ingredients:
Idli Batter - 2 Cups
Onion - 1 Medium
Green Chilies - 2
Curry Leavse - few
Chopped Coriander Leaves - 2 tbsp
Red Chilli Powder - 1/2 tsp
Turmeric Powder - 1/4 tsp
Freshly Crushed Peppercorns - 1/4 tsp
Oil - 2 tsp + To cook paniyaram
Mustard Seeds - 1/2 tsp
Split Urad Dal - 1 tsp
Grated Ginger - 1/2 tsp
Grated Coconut - 1/4 Cup
Salt - If required

Method:
1. Finely chop onion, green chilli, curry leaves, coriander leaves.
2. Heat 2 tsp oil in a wok or pan add mustard seeds and allow to splutter. Add urad dal, green Chili, onion saute until onion becomes soft.

3. Add fried onion, ginger, coconut, salt, turmeric powder, chilli powder, crushed pepper, coriander leaves with idli batter and mix well.

4. Heat the paniyaram chatti/pan, add a few drops of oil. Pour spoonful of the batter or until 3/4 of the paniyaram mold.
5. Allow the batter to cook for 2-3 minutes on a low or medium flame, turn each paniyaram with the help of a wooden skewer or spoon and cook until crisp, turn once or twice for uniform cooking if required. Repeat same for rest of batter.

Serve warm with chutney and/or sambar along with tea or coffee or perhaps juice.
