Kara Sev, Khara Sev, Karam is popular sev recipe in South Indian made with simple ingredients and quickly it's very good recipe for beginners and perfect for Diwali 2014 snacks, this is my absolute favorite, I love kara sev and can eat all day long :) the peppery flavors makes this sev so so good for people whom like spicy snacks will love this. Have it with a cup of coffee or tea and it's a bliss.


Kara sev also known as kara kaddi, karam sev or karam is crunchy and spicy. Use freshly crushed pepper for best results, increase or decrease peppercorns to suit your taste, though 2 tsp is just fine. You can also reduce rice flour to 3/4 cup instead of 1 cup to have more of besan/gram flour flavr but 1:1 works just perfectly. There are few versions of kara sev, there is one where only chili powder is used and another where only besan is used very similar to Besan Murukku, I shall try to post another one great recipe of same kara sev hopefully :) There is no stepwise pictures for this recipe accidentally it got deleted so bad of me :( but this is very straight forward recipe just mix everything, put in murukku press and fry it that's all easy right? Kara Sev (Spicy Sev) Recipe

Popular spicy, delicious savory snack sev with pepper.

Yields:2 Cups


Ingredients:

  • 1 Cup - Gram Flour/Besan/Kadala Maavu
  • 1 Cup - Rice Flour
  • 2 tbsp - Hot Oil or Soften Butter
  • A Pinch - Asafoetida/Hing
  • 1/2 tsp - Red Chili Powder (optional)
  • 2 tsp - Pepper, Coarsely Crushed
  • 1/2 tsp - Carom Seeds/Ajwain/Omam
  • To Taste - Salt
  • To Deep Fry - Oil

Method:

  1. Sieve besan (gram flour), rice flour in a large bowl, add red chili powder, crushed pepper, ajwain, salt, hing, butter or oil (whatever you are using) and mix everything. Add water in small quantity to make stiff dough without any cracks.
  2. Heat oil for deep frying in a kadai (wok), grease a murukku press (achu) and use the plate (disc) we use same for murukku (with big holes) and fill press with dough, press directly into hot oil in circles, do not make too many layer, 3-4 circle is just fine if not using very large kadai.
  3. Fry in medium heat both sides till the bubbles and sizzling ('shhhh')sounds ceases, sev becomes golden brown.
  4. Remove from the oil and drain in kitchen tissue, repeat same for remaining dough.

After cooling completely, break into pieces and store in airtight container.

Notes
  • You can add a pinch of turmeric powder too. You can also skip red chili powder.
  • You can increase or decrease pepper quantity to suit your taste.
  • Carom seeds (Ajwain/omam) adds good flavor to sev.
  • Make sure to fry sev only in medium flame.
