Okra, Ladies' Finger, Bhindi, Vendakkai, Bendakaya, bamia, and many other names it's known by it's popular vegetable in most of the Indian house hold and we can make various dishes from okra or bhindi as you can see from below list. I have complied recipes of Okra/bhindi that I have blogged so far and will be adding more when I post something few. Masoor Ki Dal or whole (sabut) masoor dal/brown lentil is one of our favorite dal. It's very easy to prepare and goes well with rice or roti/paratha and we doesn't required any other vegetables as side, just a simple salad, pickle and/or papad and you have a comfort meal which by itself is lavish. Masoor dal is high in protein, folic acid, iron and zinc. and it's way healtheir than skinned masoor dal (dhuli masoor dal)or pink dal as some calls it or Maisoor paruppu as in Tamil.
Ellu Sadam, Sesame Rice or Til ke chawal is easy variety rice recipe made with sesame seeds and other easy ingredients. Ellu sadam or sesame rice has very nutty flavor and it's one of the good lunch box recipe option. Great way to include sesame in our diet and also that it's very quick to make. I make once a while ellu sadam or til ke chawal when I want to take a break from routine dal-chawal.
Orange Sweet Lime juice or also popularly known as Ganga Jamuna Juice is refreshing juice made with orange, sweet lime or some times sweet lime is replaced with lime. One can find this orange sweet lime juice in most of the juice shops, restaurants served as ganga jamuna and what's this called ganga jamuna I have no idea but this used to be one of my favorite juice to order always. Punch of orange with sweet lime is simply amazing and it can brighten up you day in no time.
Mint Chutney or Pudina Chutney is my most favorite chutney recipe, it's flavorful, aromatic, refreshing and a total bliss every mouthful according to me. Made with simple and minimal ingredients pudina chatni makes good side dish with idli, dosa, upma, pongal, adai, paniyaram or even with paratha, any variety rice (I like to eat with plain rice too) and also we can also use this base for any sandwich or serve with any starter.
Vendakkai Sambar, Ladies Finger Sambar or Okra Sambar whatever we may like to call this vendakkai sambar is one of my favorite and I actually like this more than murungakkai (drumstick) sambar. Okra goes so well with tangy flavored sambar making it perfect side dish with steamed rice and I do try this make this regularly. If you like sambar and ladies finger (bhindi) then you will love this sambar too, it's easy to prepare and taste just yum.
Beetroot Raita is easy, no-cook, no-oil raita recipe which we can do in jiffy to get colorful looking raita to serve along any pulao, biryani or variety rice, paratha etc. I have already posted beetroot pachadi an Kerala style raita where beetroot is cooked and also coconut used. This raita is very simple with few ingredients a recipe which I wanted to posted for a very long time and finally it's happening now.
Bottle gourd curry, lauki sabzi or dudhi sabji is something I that make more with bottle gourd other than the dal. This lauki sabzi is very easy, simple and made with minimal ingredients and it goes well with roti, paratha or with dal-rice, rasam-rice etc. Normally I make this dudhi sabzi with roti or when I want to make simple lunch then I make it with dal-rice combo. This is typical Uttar Pradesh style of sabzi made like in our home but I did mention few variations in notes which you can try too.
Ripen Mango Dal is easy dal recipe made with ripen mango and season with cumin seeds, garlic, onion for a flavorful dal. Mostly made mango dal is made with raw mango but you have to try this with ripen one's it adds little sour and sweet taste to the dal, it's also one of good way to using ripen mango if they are sour. Since the mango is ripen it's takes almost no time to cook other than the dal cooking time so if you haven't tried yet then do try this dal.
Vegetable Fried Noodles or veg noodles is an Indo-Chinese recipe popular among all ages and this spicy noodles recipe for the people whom like spicy food unlike Hakka Noodles which is not very spicy. Both the recipes are almost same here we just add lot of sauce to make the noodles more spicy and choice of vegetables still remains to what we like. Now that school holidays going and with kids at home you can try this noodles as kids like noodles and they get variety to eat.
Mango Juice is like any other juice very easy and quick to prepare, it's also one of best way to deal with hot summer I personally think. I have been mango juice a lot these days to deal with hot day and nights. A tall glass of chilled mango juice can do wonders when we suffer with heat, mango juice is made with minimal ingredients. Instead of buy mango juice or drink from outside use this mango season to fullest and make your own economical and healthy drink at home.
Imli Ki Meethi Chutney, Sweet Chutney or Sweet Chaat Chutney, tamarind sweet chutney is easy chaat chutney made with tamarind, raisins, jaggery as main ingredients. I have already posted sweet chutney recipe in which is made from tamarind and dates and in this sweet chutney no dates are used. If I run out of dates stock (which is like rare( and need to prepare some sweet chutney then this is recipe I follow, it's easy and quick and makes real good chaat sweet chutney.
Chana Dal Kheer, Kadalai Paruppu Payasam, Senaga Pappu Payasam is all easy kheer made with milk, chana dal and sweeten with jaggery. This is one of easy kheer or payasam recipe which taste delicious, served hot, warm or cold it's yum all the ways. This chana dal kheer is similar to moong dal kheer but of course the taste is different due to the different kind of dals used.
Beetroot Buttermilk or cukandara chaas is easy, quick buttermilk recipe with addition of beetroot and few extra ingredients to take usual buttermilk or chaas to all new level. Beetroot not only make the buttermilk more pretty but it also taste yum and of course added nutrition of beetroot. I love beetroot and that's a known fact here, in my house there are hardly any days when I don't have beetroot in stock.
Prawn Black Chickpeas Curry is easy prawn curry with added benefits of chickpeas. Chickpeas adds good crunch and taste to prawn curry and also adds volume to the dish. You can add white, green or black chickpeas just anything of your choice and the curry taste good all way. Only thing to remember in this curry to soak and boil chickpeas but you can also add canned chickpeas or if you making chickpeas curry then keep aside little to make this curry.
