Dubki-Wale-Aloo-Sabji
Dubki wale Aloo, or aloo rasa is potato curry in thin spiced gravy. Dubki means dipping so in this curry potatoes are dipped in the gravy as you can see in the picture there are lot of gravy but less of potato. In dubki wale aloo we shouldn't not see much of potato but the gravy is important here it's very thin yet delicious. Dubki wale aloo is famous in Mathura, one of the holy city in Uttar Pradesh where Mathura is birth place of Lord Krishna.

Mathura ke dubki wale aloo recipe is slightly different from this one as there's no onion is used in this recipe I used onion, ginger, garlic to make it every day recipe, the Mathura version I shall share some time. This is one of my favourite aloo sabzi as it's easy, delicious and go with almost every thing whether is roti, paratha, poori or some jeera rice, plain rice.

I made this dubki wale aloo and matar kachori on last day of year ie on 31st Dec which is also my brother birthday so the birthday special was matar kachori, this aloo curry with jeera rice, kheer for brunch which every one liked it so much specially the birthday boy and I got a chance to click the picture to share is super easy recipe with you all.

This dubki wale aloo is very handy recipe if we don't have any vegetables in hand or want to make something real quick without much effect, try this and you will love it too. The fab color red depends on the red chili powder and also tomato paste helps to bring the bright red color, so if you are not using tomato paste your curry color might be little different, don't worry about it the taste will be good in any case.

Dubki wale Aloo | Aloo Rasa Recipe

Potato curry with spices and lot of gravy.

Ingredients:

  • 3 medium - Potato
  • 1 medium - Onion
  • 2 - Green Chilies
  • 1 large - Tomato
  • 1/2 tbsp - Tomato Paste (or another tomato)
  • 1 tbsp - Oil
  • A Pinch - Asafoetida/Hing
  • 1/2 tsp - Cumin Seeds
  • 1/2 tsp - Mustard Seeds
  • 2 tsp - Ginger Garlic Paste
  • 1 tsp - Red Chili Powder
  • 1 tsp - Coriander Powder
  • 1/4 tsp - Turmeric Powder
  • 1/4 tsp - Garam Masala Powder
  • 1/2 tsp - Amchur/Dry Mango Powder
  • 4 Cups - Water
  • To Taste - Salt
  • 1/2 tbsp - Chopped Coriander Leaves
  • 1/2 tbsp - Lemon Juice

Method:

  1. Peel and slice onion, peel and dice potato in cubes, chop tomato, green chili, coriander leaves.
  2. In a pressure cooker heat oil add hing, cumin seeds, mustard seeds and allow to splutter. Now add onion, green chili, ginger-garlic paste and saute until onion becomes light brown. Add potato and mix well.
  3. Dubki-Wale-Aloo-Sabji
  4. Saute potatoes for 2 mins in medium flame, now add red chili powder, turmeric powder, coriander powder, tomato, tomato paste mix well and cook until tomato gets mashed.
  5. Dubki-Wale-Aloo-Sabji
  6. Once tomato gets mashed, add salt, water, amchur powder, garam masala, coriander leaves and give a good stir, close the cooker and pressure cook for 2-3 whistles and off flame. Once pressure released open cooker and add lemon juice, mix well.
  7. Dubki-Wale-Aloo-Sabji

Serve hot or warm with kachori, poori, paratha or jeera rice.
