Broccoli Beetroot Cutlet or broccoli beetroot tikki, beetroot broccoli patties is easy, delicious, healthy and vegan snack for tea time or for kids lunch/snack box. We can also serve this as starter or finger food during party or get-together. This is one of the most easy and delicious cutlet plus very healthy as I have just pan-fried here. We can do this cutlet with many variations to try something new every time. I lost the step by step pictures so there's no for this time, shall try to update some time that.


I made this beetroot broccoli cutlet for tea first time when I was clearing the fridge before our India trip and I didn't had much time to finish all the vegetables so I decided to use the broccoli & beetroot to make cutlet and from then it has become one of the favorite for us. Also I have used oats and now I don't use potato any more just add oats which works great as binding agent. I didn't deep fry these cutlet but you can deep fry if preferred or if making in large batch then deep frying makes more sense and it's faster.

You can also make this cutlets in 2 ways, one is the recipe I have given below or you can dip cutlets in in maida+water mix and coat with breadcrumbs and cook. I did in very simple way so it takes less oil to cook but if you want good and pretty looking cutlets then you have to shallow or deep fry after coating with bread crumbs :) specially if making for some guest or party. If making for self then decide whatever you want to do or you can do both ways. Broccoli Beetroot Cutlet (Tikki) Recipe

Healthy pan fried vegan broccoli beetroot cutlets/patties with spices.

Ingredients:

  • 1 Medium - Broccoli
  • 1 Medium - Beetroot
  • 1 Medium - Potato
  • 1/2 Cup - Oats (optional)
  • 1/2 tsp - Grated Ginger (optional)
  • 3 - Green Chilies
  • 1/2 tsp - Turmeric Powder
  • 1 tsp - Red Chili Powder
  • 1 tsp - Roasted Cumin Powder
  • 1/2 tbsp - Lemon Juice
  • 1/2 tsp - Chaat Masala
  • 2 tbsp - Chopped Coriander Leaves
  • To Taste - Salt
  • To Cook - Oil

Method:

  1. Wash, cut into half and pressure cook potatoes for 3 whistles or cook in open pan until soft. Meanwhile peel, wash and grate beetroot, grate broccoli (To grate broccoli you can use grated or cut broccoli florets and give a run in mixer) along with it's steam, finely chop green chilies, coriander leaves. Once pressure released peel and mash potatoes.
  2. In a large bowl take grated broccoli, beetroot, mashed potato, oats (if using), green chilies, ginger, coriander leaves, red chili powder, turmeric powder, cumin powder, salt, chaat masala, lemon juice and mix well to combine.
  3. Divide dough into equal portions (comes around 10 to 12 pieces) and roll between both hands to form in log shape or round shape, slightly press to flatten. You can also use cookie cutter to cut in heart shape, whatever that you like. Repeat same for rest (you can keep cutlets covered in refrigerator for 30 mins to an hour to firm them).
  4. Heat a pan or tawa add 1 tbsp oil, place 4-5 pieces of cutlet and cook in slow to medium heat until it becomes light brown, turn to other side and cook again until light brown, if needed drizzle some oil, repeat same for rest of pieces.

Serve hot or warm with green chutney or sauce.

Notes
  • You can do coating in maida & water mix, cover with bread crumbs and then shallow fry or deep fry the cutlets.
  • If you are not able to bind dough, add oats or bread crumbs. You can also skip potato and use only oats for binding.
  • If you wish you can steam or blanch beetroot & broccoli too.
  • You can also deep fry the cutlets if preferred or making in large batch.
  • You can use this cutlets as patties for burger too.
  • You can make the cutlet and freeze it in a box or zip lock bag and cook it later.
