Now a days I like to make chicken curry/sabzi which can be eaten with just plain steamed rice so I don’t have to make any other side dish.  This curry fits the bill perfectly, after making few methods am set with this easy chicken curry as I am still learning to cook chicken and hopefully will make fish some day soon.   It goes well with plain rice, jeera rice, peas pulav or roti and taste delicious, without much effort.  Normally I use boneless chicken for any curry and the few pieces that comes with bone (though we buy bonelss!) make Chicken Clear Soup, two-in-one Smile Try this simple chicken curry and I’m sure you will love this too.
Ingredients:
Oil - 3 tbsp
Cumin Seeds - 1/2 tsp
Fennel Seeds - 1/2 tsp
Tomato Puree - 2 tbsp
Water - 2-3 Cups
Garam Masala Powder - 1 tsp
Crushed Kasoori Methi - 1 tsp
Salt - To taste
Cilantro - 1 tbsp [chopped]
To Grind
Onion - 2 large
Green Chillies - 3
To Marinate
Chicken - 500 gms (used here boneless)
Red Chilli Powder - 2 tsp
Coriander Seeds Powder - 1 tsp
Turmeric Powder - 1/2 tsp
Salt - to taste
Ginger-Garlic Paste - 2 tbsp

Chicken Sabzi Chicken Gravy Recipe Curry Recipes

Method:

1. Wash chicken pieces and marinate with the ingredients listed under ‘to marinate’ and keep aside for 2 hours or until we are doing other prep work.  Minimum keep chicken marinated for 15 minutes.
2. Grind the items listed under ‘to grind’ and keep aside.
3. In a wok or pan heat oil add cumin and fennel seeds and let it splutter.  Add grounded onion paste and sauté until raw smell goes off and oil starts to leave start of wok/pan.
4. Add marinated chicken and mix well, cover and cook for 7-10 minutes in slow-medium flame or until chicken gets tender.
5. Add tomato puree and sauté for 2 minutes again.  Add water, mix gently and let it come to boil and then simmer for 5 minutes. 
6. Now add garam masala, kasoori methi and adjust salt if required, simmer for 2-3 minutes or until the consistency you want. 
If serving with rice you can keep gravy so it’s easy to eat, for roti/chapati/naan make it thick gravy or as you like.

Chicken Clear Soup | Oil Free Cooking

After chocolate walnut cookies, I thought of posting this easy chicken soup recipe which can be made in jiffy.  This chicken soup is very simple and best for any day whether summer, winter or rain.  If having cold/cough it’s good to have this soup too.  If you are making any chicken dish, just take few chicken pieces with bones are good for this and make the soup.  With extra dose of fresh crushed pepper this soup taste very delicious and honey adds sweetness plus it’s good for throat.  As the fresh chicken leaves it’s oil by itself this soup doesn’t require oil or butter too.  You can also add chopped carrot, peas etc.  Try this simple and easy chicken soup, perfect for kids or adults. 
Chicken Clear Soup Recipe

Ingredients: [Serves 2-3]
Chicken Pieces- 1/2 cup
Minced Ginger-Garlic - 1 tsp
Chopped Cilantro - 2 tsp
Salt and Pepper - to taste
Water - 3 cups
Honey - 2-3 tsp
Easy Clear Chicken Soup Recipe
Method:
1. Add everything except honey in a pot/wok/pan bring it to boil and simmer until chicken gets cooked around 10 minutes/
2. Divide the soup in 2-3 bowls and add 1 tsp honey in each bowl before serving.

Chicken Cashew Masala | Chicken in Onion and Cashew Sauce

These pictures have been lying in my drafts for very long time now and I thought it's time to post this.  This chicken curry was made by my BIL when we visited them some time back.  I quickly took pictures so excuse the picture quality it was in hurry as my we all were very hungry.  I asked BIL for the recipe while eating asked and made a mental note  :).  Since this is so simply and delicious chicken recipe I wanted to post it.  Hope you guys enjoy this curry as much I  did. 
Chicken Curry with Cashew
Ingredients:
Chicken - 1 bird [medium size]
Onion - 300 gms
Ginger-Garlic Paste - 1tbsp
Cinnamon Powder - 1/2 tsp
Cumin Powder  - 1/2 tsp
Clove Powder - 1/4 tsp
Red Chili Powder - 1 tsp
Coriander Seeds Powder - 2 tsp
Turmeric Powder - 1/4 tsp
Cashew Paste - 1/4 Cup
Oil - 5 tbsp
Salt - to taste
Cilantro - 3 tbsp chopped [For garnishing]
To Marinate:
Red Chili Powder - 2 tbsp
Ginger-Garlic Paste - 1tbsp
Lemon Juice - 2 tbsp
Salt  - 2 tsp
Chicken Masala Recipe
Method:
1. Clean, wash chicken pieces and add all the marination ingredients and let it marinate for 2 hours or longer.
2. Chop onion in chunks and grind it into smooth paste, add little water only if required.
3. In a pan heat oil add onion paste, all the spice powders and fry until onion starts to leave oil around 15 minutes in medium to slow heat.  Onion has to be fried well so take your time on this.
4. Add marinated chicken, mix well and let it cook until chicken pieces gets cooked fully in medium to slow heat.  Stir in intervals and this will take little longer time around 20+ minutes.
5. Add salt and cashew paste mix everything well and cook until oil starts to floats on top for around 10-12 minutes in slow flame.  Off the flame and garnish with cilantro.
This recipe takes times but it has to be cooked in slow to medium flame and it's worth it and here is my platter with poori and pulav and so many other things.

Tandoori Chicken


I have blogged Tandoori Chicken and Tandoori Chicken on Stove Top, but this is a little different recipe which I followed from Saptha Blog.. This one I prepared on popular demand for a get together and it goes without saying everyone loves it :).  

I was getting late & clicked the picture in hurry; couldn't real take proper pictures so kindly excuse that but rest assure it's a wonderful recipe.  Thanks to Saptha for posting this simple and wonderful recipe,  Saptha also have tandoori masala recipe in her space, check that out if you want to make home made one ...here I use readymade masala.  


 Ingredients:

Chicken - 1/2 kg
Tandoori Masala - 8 tbsp
Ginger-Garlic Paste - 6 tbsp
Thick Curd - 1/2 cup
Lemon Juice - 1/4 cup
Butter - for brushing
Salt - to taste 



Method:

1.  Clean, wash and slit the chicken pieces.

2. In a large bowl/plate mix tandoori masala, ginger-garlic paste, curd, lemon juice, salt and stir well.  Now add the chicken pieces and mix everything well (if required adjust salt, lemon and tandoori masala).   Marinate for 3-4 hours or keep over night in fridge.


3. Preheat the oven in grill settings, meanwhile brush the chicken pieces with butter and grill at 250C for 45-50 minutes or until the chicken is fully cooked.  Brush again with little butter on top

OR use normal oven settings at 250C, brush chicken with butter; line on a foiled baking tray and cook for 15 minutes, turn to other side & brush with butter cook for another 15 to 20 minutes.  Take out the tray and brush again with little butter.


Serve warm with green chutney, chopped onion and lemon.  Enjoy the feast.

Chicken Masala

I do not make much of non-vegetarian dishes at home ...is not that I eat outside much too.  To be truthful this must be 2nd or 3rd dish made in my kitchen.  This chicken masala was prepared by DH I just did the cutting part. The recipe followed here is almost identical to prawn masala and it's tasted so awesome.  The smell and taste was exactly better than Anjappar chicken, perhaps this will give me more inspiration to cook non-vegg :)


Serves 2-3 people
Ingredients:

Chicken Breast - 250gms
Onion - 2 large
Tomato - 1 large
Green Chili - 2
Red Chili Powder - 1 tsp
Coriander Powder - 1 tsp
Turmeric Powder - 1/2 tsp
Garam Masala Powder - 1/2 tsp
Tandoori/Chicken Masala - 1 tsp
Cilantro- 2 tbsp chopped
Oil - 2 tbsp
Salt - to taste
Water - 1 to 1.5 cup

To Marinate:
Red Chili Powder - 1 tsp 
Turmeric Powder - 1/2 tsp
Ginger-Garlic Paste -1 tsp
Lemon Juice - 1 tbsp
Salt  - 1/2 tsp


Method:

1. Clean, wash and marinate chicken pieces with all the ingredients listed in marination list.  Keep aside for 15-30 minutes.

2. Meanwhile chop onion, tomato, chili, cilantro and keep aside.

3. In a pan heat oil add onion and saute for 1 minute, add ginger-garlic paste, chili and mix well, saute until onion becomes transparent. 

4.  Add all the spice powders and stir well, cook for 5 minute in medium heat.  Now add tomato, salt (be careful with salt since we added in marination too) and cook until tomato becomes tender and oil comes on top.

5. Add marinated chicken and give good stir, cook for 5-7 minutes in medium-slow heat.  Add 1 cup water and cook until chicken becomes tender and cooked, stir in intervals.. it takes around 10-15 minutes in slow to medium heat.  If required add more 1/2 cup of water. 
Adjust salt n spices if required.  We kept minimal gravy since I like this way ..you can keep little gravy if you want. Garnish with cilantro.

Serve with steaming rice or hot chapati, it goes well with almost everything.  We had with steamed rice.

Tandoori Chicken on Stove top



This is again made by sis along with Chicken Gravy.  She made these for starters and these sell very fast, unlike my previous Tandoori Chicken which was prepared in microwave this she had made on stove top but the result was just awesome. 




Before moving over to the recipe a reminder to all about Festive Food: His Cooking Event, do send in your entries.


Ingredients:

Chicken - 200 gms (boneless)
Capsicum - 1/2 [chop in square]
Onion - 1/4  [chop in square]
Butter - 3 tbs

For marination:

Ginger-garlic paste - 1tbs
Lemon Juice - 1tbs
Redchili powder - 1 tps
Turmeric - 1/2tps
Tandoori Masala powder - 1 tps
Black pepper - 1/2 tps (freshly crushed)
Salt - to taste

Method:

1. clean, wash and cut chicken in medium cubes.

2. Dice onion (separate each layer of onion) capsicum in same size, shape and keep aside.

3. Marinate chicken with all ingredients for marination 1-2 hrs, the longer marination the better.

4. Heat a pan add 1 tbs butter, add onion & capsicum and saute until capsicum gets tender for 5mins in high flame do stir in between to avoid burns & keep aside.

5. In a same pan add again 1 tbs of butter allow it to melt now add the marinated chicken and cook in high flame for 5mins tossing in intervals.

6. Add remaining butter and cook in medium flame for 8-10mins or until chicken become tender. 

7. Add capsicum and onion and toss well and cook for 2 mins, add little more butter if required.



**To save time one can cook the chicken in microwave for 5mins after marination.

Chicken Curry in Onion Gravy or Onion Chicken curry is chicken cooked in onion paste and spices. This curry is very delicious and same time it's quite easy to prepare too. If you are bored of your routine chicken curry then you should try this, everyone loves this curry and I make this mostly for guests and they simply adore this recipe. 

Chilli Chicken | Chili Chicken Recipe

Chili Chicken is popular Indo-Chinese recipe and if you eat chicken than this is a treat.  My sister makes some really good chili chicken and while we visited her she made this.  Though the ingredients and method looks long and complicated but if all the ingredients kept ready then it's easy and quick recipe.  Have it as started or side dish and enjoy.



Ingredients:

Boneless Chicken - 400 gms
Carrot - 1/2 diced [square pieces]
Capsicum - 1/2 diced [square pieces]
Onion - 1 diced [square pieces]
Spring onion - 2 tbsp chopped
Garlic paste - 1 tbsp
Green chili - 1 tsp minced
Egg - 1
Cornflour - 2 tbs[
While Cashews -  18 to 20 pieces
Dry red chili - 10 sliced
Black pepper - to taste
Ajinomoto - a pinch (optional)
Dark Soy Sauce - 1 tbsp
Chili Sauce - 1 tbsp
Vinegar - 1/2 tsp
Sugar - 1 tsp
Salt - to taste (if required)
Oil - to deep fry + 2 tbsp oil
Water - 1/4 cup


Method:

1. Marinate clean and washed chicken with 1/2 tbsp garlic paste, 1 tbsp cornflour, salt, egg, minced green chili for 1 hour or more. 

2. Dissolve 1 tbsp of cornflour in 1/4 cup of water and keep aside.

2. After 1 hour deep fry the chicken pieces [add more cornflour if required] and keep aside.

3. In a pan heat 2 tbs oil, add garlic paste, onion and saute for minute, add dry red chili, cashews  & mix well.

4. Add diced carrot and capsicum and saute for 2-3 minutes in high flame.

5. Now add fried chicken pieces along with pepper, soy, chili sauce, ajinomoto (if using), vinegar, salt, sugar and stir well.

6.  Add dissolve cornflour mix and stir well for a minute or until chili chicken becomes dry.  Add half of the chopped spring onion and stir.

Garnish with remaining spring onion and Serve hot.


Chicken Masala with Capcium & Baby Corn

o this time is Chicken Masala with capcium & baby corn. This one is from my sis again. I have brainstorm a lot of what to give the name other than masala to tag along but I still settle myself with the Masala tag ! So here presenting the chicken masala with capsicum & baby corn. (The pic is not gud but the taste was yum)

Ingredients:

Chicken - 300gms (or as required)
Baby corn - 5-7
Capsicum - 1/2
Onion - 2 large (sliced)
Tomato - 1 large
Giner-garlic paste - 1tbs
Cinnamon - 1 stick
Cloves - 2-3
Cardamom - 2
Cumin seeds - 1/2 tps
Redchilli powder - 2tbs
Turmeric - 1/2 tps
Oil - 3tbs
Water
Salt - to taste
Coriander leaves - 2tps chopped

For marination:
Curd - 1/2 cup
Giner-garlic paste - 2tbs
Lemon juice - 1tbs
Salt - 1tps
Redchilli powder - 1tps
Turmeric - 1/2 tps

Method:

1. Marinated chicken (cut in medium size cubes) with all the migration ingredients for 1-2 hrs.
2. In a pan heat oil, stir fry capsicum and baby corn separately and keep them aside.
3. In the same pan add cumin seeds, cinnamon, cardamom, cloves.
4. Add sliced onion and saute it, add ginger garlic paste and mix well.
5. Add chopped tomato and cook for 2-3mins.
4. Now add all the powder masala and cook until oil starts leaving the edges.
5. Add the marinated chicken, mix everything and with lid on for 3-5mins.
6. Add 1cup of water or as water required, salt and cook until chicken becomes tender. Add the capcium and baby corn now and cook for 2more mins.
7. Garnish with chopped coriander leaves.
This curry goes well with roti or rice.
