Lot of request I received to post healthy sweets and snacks for diwali and though I already have dry fruits burfi, dates sesame ladoo, dry fruits and nuts roll in blog but people do look for more things so I am posting this healthy ladoo recipe today which anyone can have guilt-free.

Anjeer Mawa Burfi, Anjeer Khoya Burfi, Anjeer Burfi, Figs Burfi, Mava Figs Barfi we can call this burfi with so many names and this is one recipe in my wish list to post for a long time, figs or anjeer burfis are very delicious at the same time very easy to prepare. From the time I posted Dry Fruits Burfi I wanted to post this too but I made this rarely and never manage to take pictures these cuties always disappears so fast :)

We can also make figs (anjeer) milkshake with diary milk but if you want vegan drink or want to try something different then try this figs milkshake with almond milk or even try it with coconut milk. I have used dried figs if you can find fresh figs then do use that, after all what's better than fresh products.

Dry Fruits Burfi is easy diwali/deepavali sweet recipe which is sugar-free, fat-free and healthy burfi (sweet) and works great as snack too. Loaded with cashew nuts, almonds raisins, pistachio, walnut, dried figs and dates goodness this easy burfi is good option during Diwali or any festival among all the other deep fried and sweet dishes. This easy and healthy burfi is for kids snack box too or to satisfy those sweet cravings.

Anjeer Suji Phirni | Diwali Recipes


Phirni is creamy and very rich dessert, traditionally made with grounded rice but here I am using Suji/Semolina which can be done in jiffy.  If you are pressed for time during this festive season and want to still make something different then phirni with figs and semolina is a great idea+recipe.  The versatility of phirni makes it a perfect for any party, get-together or potluck as we can make plain, saffron, nuts, fruit phirni using both rice or rava.  Here I used anjeer/dry figs which not only add good taste and crunch to firni but also it helps to reduce sugar in dessert as figs are sweet by itself.  Creamy chilled phirni with anjeer bite and cardamom flavor is so good and yum, it’s difficult to describe.  If you get fresh anjeer then use that as nothing beats fresh fruit. 


As Diwali approaching I thought of using this kulhar to give authentic look, also phirni is normally served in earthen cups/bowls as it’s helps to absorb the moisture from phirni making it more thick ,dense and delicious, don’t trust me?  Try it.


Kulhar is a traditional clay cup/tumbler unpainted and unglazed from North India and is meant to be disposable.  Now a days there are so many other types of kulhar made of terracotta, plastic, painted and what not (you see one in my this lauki kheer post too) but those are not authentic.  It’s divine to drink tea in kulhar and the fun to break the kulhar with a loud thud, tea definitely  taste much better if kulhad is used. 



Ingredients:

Dry Figs/Anjeer - 1/2 Cup [Chopped]
Milk - 500 Liter / 3 Cups
Ghee - 1 tsp
Chiroti Suji/Rava/Semolina - 1/4 Cup [you can use regular rava too]
Sugar - 1/2 Cup [ or to taste 3/4 to 1 Cup]
Saffron - a pinch
Cardamom Powder - 1/2 tsp
Sliced Almonds & Pista - 3 tbsp
Sliver Varq - For Garnishing [optional]


Method:

1. If using dry figs soak in hot water for 30 minutes, this will help to remove impurities and also soften anjeer.   Once soaked rinse under water and finely chop.

2. Meanwhile keep milk for boiling and once it starts to boil, allow it to simmer until we need.

3. In a pan heat ghee and add suji.  Roast until light golden brown and aromatic. 

4. Now add milk and stir well to avoid any lumps.  Cook in medium flame for 2 minutes to thicken phirni, add sugar and stir.

5. Once phirni becomes thick or the consistency you prefer is reached add cardamom powder, chopped figs/anjeer and mix well.

6.  Add dry fruits (keep little aside for garnishing), mix everything well and off flame. (after adding anjeer don't cook for long)

7. Allow phirni to come in room temperature, transfer in a serving bowl or individuals serving glass/bowl what ever you are using, cover the glass/bowl with cling and chill in fridge for at least 30 minutes before severing.   

Garnish with nuts and serve.  Enjoy these easy yet delicious Phirni.


How To prepare Kulhar To Use

1. Wash and immerse kulhar in water for 15 minutes or longer. 
2. Hold water in kulhar/kulhad and check if it’s liking from any side, if yes you may not use that depending upon what you are planning to serve.
3. Rinse again in water and pat dry with clean cloth. 


Our kulhar is ready to use.

Anjeer Khajoor Roll | Dry Figs Dates & Nuts Roll Recipe

Today marks the 3rd Anniversary of Indian Khana, it has been 3 years since I started this blog and it's like just yesterday!  As I said before I never thought I will come this far and this happened due to all the wonderful blogger friends and readers, so Thank You all for your support and that's makes me going. To celebrate the blog anniversary I made this Anjeer Khajoor Chakra or Roll you can say which is sugar free, ghee/butter free and loaded with nutrition value.  It makes a perfect snack or dessert which one can enjoy any time of day or a detectable sweet for festival's and it's also very easy, quick to prepare, now what else one can ask for?  Enjoy the sweet and thanks for being there.  



Makes 20-24 pieces
Ingredients:

Dry Figs/ Anjeer - 20 pieces
Dates/Khajoor - 1 1/2 Cups
Walnut - 1/3 Cup
Almond - 1/3 Cup
Cashew nuts- 1/3 Cup
Nutmeg Powder - 1/2 tsp
Desiccate Coconut - 3/4 Cup
Sliver Varq - As required
Water - 1 Cup



Method:

1.  Soak dry figs/anjeer in warm water for 1 hour.


2.  De-seed the dates and chop in pieces. 


3. Meanwhile finely chop all the fry fruits.  I use my nut cutter, you can give a run in mixer or blender each nut separately. Divide each chopped dry fruits in two parts and keep aside.  


4. Grind soaked figs without any water, add chopped dates and grind it to smooth paste.

5.  Mix half portion from each chopped fry fruit and with figs and dates paste and make a soft pitiable dough.


6. Now add coconut (coconut helps to make the dough firm and non-sticky).  Divide the dough in to four pieces and make smooth balls.   


7. Take a piece and keep between plastic sheets or ziplock bags and roll to make a thin layer.  Cut the edges if required. 


8. Sprinkle almond, cashew and walnut around 1 tbsp of each and start to fold the layer into a roll, use plastic sheet for folding, this way the dough wont stick or break.  Keep the roll wrap in the plastic sheet and fold the sheets edges.  Repeat the same procedure for remaining pieces.
 

9. Store wrapped roll in fridge for 2-4 hours or over night, apply sliver varq if using and cut in desire shape. 
~ We this keep in fridge to make the roll firm otherwise it's tends to break.  Be gentle while making the pieces and use a sharp knife.


And our chakra/roll is ready.


Enjoy this guilt free sweet with no sugar or ghee along with dry fruits, fig and dates benefits. 

Notes
You can use dry coconut instead of sliver varq for garnishing the roll.
Instead of chakra, one can make laddo or squares.  
Use sugar if required.
Store the chakras/roll in butter paper if using sliver varq.
