We can do this cutlet with many variations to try something new every time. I lost the step by step pictures so there's no for this time, shall try to update some time that.

Broccoli poriyal/thoran or stir fry is very common in our place and I do most of the time stir fry with broccoli and this time I added beans with broccoli for this broccoli beans stir fry, thoran or poriyal whatever we may call it.  After all the diwali recipes, a much needed break from all the sweets and savory snacks is with this healthy and delicious stir fry.

I love pesto you can see that in my spinach pesto, roasted beets pesto recipes since it's difficult to find basil here so I buy some times basil pesto but store basil pesto can be bitter in taste few times and it's spoils the whole pasta anyways basil pesto is not we going to talk about today.  Recipe of the day is Broccoli Pesto Pasta I make broccoli pesto in a different ways but when I saw this recipe in Raks blog I knew I going to make this as it's really easy, quick and taste good.

Broccoli Raita Recipe

What’s your favourite raita recipe or say which one you make the most?  I often make onion and/or cucumber raita followed by boondi raita cause these are most simple to make and takes less time.  But then once in a while I do little experiment here and there and this broccoli raita is one such recipe.  I get bored of making same broccoli soup, broccoli stir fry, broccoli thoran etc so I try new recipes and this broccoli raita fitted my bill for a Saturday lunch. 

Broccoli Raita

Ingredients:

Broccoli - 1/2 cup chopped/grated
Yoghurt/Curd - 1 Cup
Green Chillies - 2
Minced Ginger - 1/2 tsp
Cumin Seeds - 1/2 tsp
Curry leaves - 3-4
Salt - to taste
Oil - 1 tsp
Chopped Carrot - 1 tsp [optional]

Method:

1. Wash and grate or chop broccoli.  You can use chopped, food processor what ever that fancy you. [In the picture it’s not half cup of broccoli Smile ]

2.Finely chop green chillies and mince ginger well. Beat curd and keep side.

3. In a wok or pan heat oil add cumin seeds and allow it to splutter. Add ginger, chillies curry leaves and sauté until ginger becomes light brown.

4. Add broccoli, salt and sauté for 3-4 minutes in medium flame or until broccoli gets cooked but still crunchy.

5. Add cooked broccoli to curd and mix well.   Adjust salt if  required.  Serve as it as or chilled.

Garnish with chopped carrot if you wish, I do that to add colour and crunchiness to the raita.

We had it with pulao, you can try this with any parata, pulav, variety rice.

Variations ~
~ Ginger adds nice flavour to the raita so try not to skip.

Broccoli & Carrot Poriyal | Thoran | Stir Fry

From last one year plus broccoli has been so regular at home thanks to vegetable shopping at done  mostly in supermarkets! Most of the time I make Broccoli Soup or Stir Fry or some time I venture into another recipes provided I have the mood.  This is a very simple, quick and delicious recipe which can be done in just 10 minutes including chopping if you are using a chopper.  I didn’t add coconut as I was short of it but it tasted delicious, am sure coconut will add wonderful flavour to the dish.   Try this combination to make your broccoli stir fry more interesting. 

Broccoli and Carrot Stir Fry Thoran
Ingredients
:
Broccoli - 1 head
Carrot - 2
Green Chillies - 2
Oil - 2 tsp
Asafoetida/Hing - a pinch
Cumin Seeds - 1/2 tsp
Mustard Seeds - 1/2 tsp
Dry Red Chilli - 1
Curry Leaves - 1 Sprig
Turmeric Powder - 1/4 tsp
Red Chilli Powder - 1/2 tsp
Grated Coconut - 3 tbsp [ I didn’t use]
Salt - to Taste
Carrot and Broccoli Poriyal Thoran Stir Fry Recipe
Method:
1. Wash and finely chop broccoli or you can grate it too, I used my chopper which does  very fine chopping.  Wash, peel and finely chop carrot, green chillies.

2. In a pan or wok heat oil, add asafoetida, cumin and mustard seeds and allow to splutter.  Add curry leaves and dry red chilli and sauté for 30 seconds, add carrot and fry for a minute.

3. Add broccoli and give a good stir let it sauté for a minute too.  Now add turmeric, chilli powder, salt mix well,  cover the pan and cook for 3-4 minutes on medium flame.

5. Add grated coconut (if using) and mix well cook for a minute or until everything is cooked but still crunchy.

It hardly takes 5 minutes to cook as broccoli and carrot are finely chopped.  Goes well with plain rice or with dal/sambar, rasam rice.

Broccoli Stir Fry Recipe

There was a time I didn't use to like Broccoli and now it has become regular at home, most of the time I conveniently make Broccoli Soup, broccoli salad or a simple stir fry like I did with the Kathrikkai Rasavangi.  This time I decide to add tomato to bring a little tangy flavor, you can skip the tomato if you don't want to use but with or without tomato it's makes a good stir fry and goes well with just any thing.  



Ingredients:

Broccoli - 1 floret around 350gms
Onion - 1 medium size
Tomato - 1 medium size
Green Chilies - 2
Garlic Cloves - 2
Cumin Seeds - 1/2 tsp
Red Chili Powder - 1/2 tsp
Coriander Powder - 1/2 tsp
Turmeric Powder - 1/4 tsp
Oil - 2 tsp
Salt - taste



Method:

1. Wash and cut the broccoli in small florets.  Chop the stems too if you prefer, I try to use stems.


2. Slice the onion, slit chilies and chop tomato, keep aside.  Crush or chop the garlic.


3. In a pan heat oil, add cumin let it crack.  Add garlic and saute until light brown

4. Add onion, chilies and saute until pink.  Add broccoli florets and saute for 2-3 minutes in medium flame.


5. Add salt mix well and cook in slow flame with lid on for a minute.

6. Add tomato and all spice powder give a good stir cover and cook until tomato mash well and broccoli gets cooked but still crunchy around 3-5 minutes. 



Have with it roti/paratha or dal rice/ sambar rice.



Note
~ You can use sambar powder instead of red chili and coriander powders.
~ Skip the tomato if you wish.
~ One can add little Amchur/Dry Mango Powder instead of tomato.

Broccoli Soup

What do you like to have when you are feeling sick..specially with cold, cough and fever, would you like to share?

I'm in this condition now for 3 days and today being alone at home I'm in no mood to cook or do anything.  Then around lunch time I started feeling little hungry, I have to take medicine too so I thought to make broccoli soup ..a plan which I happily kept postponing for almost a week now and also the broccoli was screaming on me to be consumed.  I didn't follow any particular recipe, and just added whatever I feel like it but this is my normal way of making any soup ;).  


Serve - 4 cups appr.
Ingredients:

Broccoli - 1 medium size [mine was around 300gms]
Cabbage - 1/2 Cup chopped [optional]
Ginger-Garlic paste - 1/2 tsp OR Just use 2 garlic pods
Clove - 1
Cardamom - 1
Peppercorns - 5-6 ~ according to taste
Olive Oil - 1 tbsp
Salt - to taste
Fresh Grounded Pepper - to taste
Water/Vegetable stock - 3-4 cups


Method:

1. Wash and chop broccoli stem and remaining into florets.  Chop cabbage.

2. In a pressure cooker heat oil, add clove, cardamom, cabbage and give a good stir.

3. Add ginger-garlic paste and sauté for a minute. 
~~ I actually wanted to use fresh ginger since I'm having cold but I didn't had any in hand ..

4. Add broccoli stems pieces, florets and sauté again for a minute.  Add salt, peppercorns and 1 to 1.5 cups of water.  Close the cooker lid and cook for 1 whistle.
 ~ I used  1cup water.  

5. Once the cooker pressure is released & mixture is cooled, blend the cooked broccoli to smooth puree.  

6. Heat a sauce pan or the same cooker; add the puree and 2-3 cups of water
~~ Depending on how you like you soup to be..I added 2 cups of water.

7. Simmer the soup for 4-5 minutes or until a nice boil comes. Adjust salt if required. 

Garnish with spring onion or carrot.  I added finely chopped carrot as it looks good and add good crunchy bites. 


Add freshly grounded pepper to taste and serve with bread stick, garlic bread or simple toast is good enough.  I had mine with toast dunked into soup and it tasted awesome...


Note:

~ You can add onion and potato instead of cabbage.
~ I think adding carrot is good option too.
~ You can cook everything in a pan too but pressure cooker saves time.
