I make more of egg burji which I never happen to post than egg curry simply cause it's quick, easy to make burji and more over I like DH version of egg and potato curry he makes it so good that nothing can beat it I simply love that curry and yes I want to post that for years now but then it's just doesn't happens. Coming back to this egg curry it's a Punjabi version loaded with spices, this curry is on spicy side and you may feel lot of masala so if you don't eat spicy food just adjust the spices accordingly but don't give a miss to this curry it taste delicious.

Sprouts Scrambled Eggs Recipe


I have posted Scrambled Eggs recipe before and in this recipe I just added sprouts to make it more nutritious and also sprouts adds wonderful crunch to these scrambled eggs.  I am trying to include sprouts in many different ways in our diet and this was one such try which now has become a regular recipe.   If you like or want to add sprouts in your diet then you might like this simple and different scrambled eggs with sprouts, it's not really a pretty looking dish but it's differently taste yum.  A quick breakfast option which can be fixed in less than 10 minutes. So leavings you all this with simple recipe and wish you a wonderful weekend.

Ingredients for Sprouts Scrambled Eggs

Sprouts - 1/2 cup
Eggs - 4
Oil - 1 tbsp
Salt & Pepper - To Taste


Method:

1. Break eggs in a bowl and whisk until fluffy and light.
2. Heat Oil in a pan or wok, add sprouts, stir and cook for 2-3 minutes until sprouts gets almost cooked.
3. Add beaten eggs and cook for 2 minutes in medium flame or until they starts to set.
4. Using a whisk or spatula stir the mixture to break eggs in to pieces.
5. Add salt & pepper mix and cook for another 2 minutes and off flame.

Serve warm with toast, pancake or anything of your choice.

Egg Kurma Recipe



I try to make different egg curry if am not making usual egg burji and this is one of those things that I tried which is more of south indian style of egg curry.   This egg kurma is easy to make and taste just too delicious with steamed rice, paratha or any variety rice.  There are many versions of egg kurma/muttai kurma  and this is something similar to chettinad egg curry but with little less spices, a good recipe to make weekend lunch special or even for lunch box.  If you also look for new things to try then you will sure like this aromatic egg kurma.  I didn't click step wise pictures but you if wish you can refer to the chettinad egg curry recipe for that.  So let's just check the recipe ...


Ingredients for Egg Kurma

Eggs - 6
Oil - 2 tbsp
Cumin Seeds - 1/2 tsp
Curry Leaves - a Sprig
Onion - 2 Large
Green Chillies - 3
Tomato - 1 Large
Ginger-Garlic Paste - 1/2 tbsp
Red Chilli Powder - 1 tsp
Coriander Seeds Powder - 1 tsp
Turmeric Powder - 1 tsp
Salt - To Taste
Cilantro - 2 tbsp [chopped]

To Roast and Grind
Poppy Seeds/Khus Khus - 1 tsp [Or Cashew nuts 7-8]
Fennel Seeds/Saunf - 1 tsp
Cinnamon - 1" pieces
Green Cardamom - 2
Cloves - 2
Fresh Grated Coconut - 4 tbsp




Method

1.  Boil or pressure cook eggs, remove shell and make small slits in egg with knife, keep aside. 
2. Finely chop onion, tomato, green chilli, cilantro and keep aside.
3.  Dry roast all the ingredients listed under 'To Roast & Grind' and grind to paste using little water if required.
4. In a pan or wok heat oil add cumin seeds and allow to splutter.  Add onion, green chilli, curry leaves, ginger-garlic paste and saute until soft.
5. Add chilli, coriander and turmeric powder mix well.  Add chopped tomatoes and cook until it gets mashed.
6. Add grounded paste, salt and saute until oil starts to separate around 8-10 minutes in medium flame.
7. Add boiled eggs and mix, now add 2 cups of water and bring it to a boil, simmer for 10 minutes or until gravy becomes thick with lid on.  Garnish with cilantro and off flame.

Serve warm with roti/paratha, rice and enjoy this delicious egg curry.

Sweet French Toast Recipe


One of the most quick, easy and delicious breakfast has to be french toast (also known as Eggy Bread) and I like french toast very much. It's good breakfast option for me whenever I am in hurry or simply in no mood to do something elaborate.


We can make savory french toast too but I hardly do that, I stick with sweet version to indulge always.   So leaving you all with a good, quick weekend breakfast option here.

Ingredients for French Toast [Serves 2]

Bread - 4 pieces
Eggs - 4
Milk - 1/8 Cup
Sugar - 3 tbsp
Vanilla Extract - 1 tsp
Butter - To Toast

To Serve [optional]
Icing Sugar - To Dust
Maple Syrup



Method:

1. Beat egg & sugar well.
2. Add milk, essence extract and mix well.

3. Heat a tawa or griller, apply 1 tsp of butter and melt.
4. Soak bread in egg mixture for 30 seconds in both sides and carefully place in heated pan.

5. Cook both sides until golden brown in slow-medium flame, repeat same for rest of breads.

Sprinkle icing sugar and maple syrup before serving warm or just have as it is.


Notes
~ Cook only in slow to medium flame otherwise toast will get burn and not cooked properly.
~ Use stale or old bread so it can soak the mixture.  Fresh bread might break in pieces.  You can keep bread in fridge for some time too before using.
~ You can add 1/2 tsp of cinnamon powder.

Chettinad Egg Curry | Chettinad Muttai Kuzhambu


Hope everyone celebrating Makar Sankranti/Pongal having great time.  Chettinad food is always very famous specially their spicy and delicious non-vegetarian recipes.  Bored of usual egg curry, I made this chettinad style egg curry and from then just hooked on, it's become instant hit at home.  Don’t get wrong impression with the long list of ingredients, its a easy and simple recipe with all the ingredients available in pantry.  This spicy, yummy egg curry is a treat to eat with rice, if you like spicy food then it’s for you.  I added little curry leaves while grinding masala just like that but you can skip that if you don’t wish too add.  Since lot of people eat non-vegetarian food during Kaanum Pongal it's a best time to me to post this recipe.


Ingredients for Chettinad Egg Curry [ Serves 4-6]

Eggs - 6
Onion - 2 [medium]
Tomato - 2 [medium]
Oil - 3 tbsp
Mustard Seeds - 1/2 tsp
Curry Leaves - 1 sprig
Red Chilli Powder - 1 tsp
Turmeric Powder - 1/2 tsp
Coriander Seeds Powder - 1 tsp
Water - 2 cups
Salt - To Taste

To Grind
Dry Red Chilli - 3
Cumin Seeds - 1 tsp
Fennel Seeds - 1/2 tsp
Fenugreek Seeds - 1/4 tsp
Peppercorns - 1/2 tsp
Clove - 2
Cinnamon - 1/2” pieces
Green Cardamom - 1
Chopped Ginger - 1 tsp
Chopped Garlic - 1 tbsp
Curry Leaves - 1 sprig
Green Chillies - 2
Khus Khus (poppy seeds) or Cashew Nuts - 1 tbsp
Curry Leaves - 2 sprigs [optional]
Grated Coconut - 2 tbsp
Water - to grind



Method:

1. Boil eggs, remove shell and make small slits in egg with knife, keep aside.
2. Dry roast ingredients except curry leaves, coconut under ‘to grind’ until aromatic (1-2 minutes) allow to cool.
3. Grind  roasted ingredients with curry leaves to smooth paste using little water and keep side.  Grind coconut with little water and keep aside.

4. Finely chop onion and tomato.
5. In a wok or pan heat oil add mustard seeds and allow to splutter.  Add curry leaves, onion and sauté until soft.
6. Add chilli, coriander seeds, turmeric powder and mix well, cook for a minute.

7. Add tomatoes, cover and cook until tomato gets mash.   Now add grinded masala paste.

8. Cook in medium flame for 8-10 minute or until oil separates. Add 2 cups of water, salt and bring it to boil.

9. Add eggs and cook for 5 minutes or until gravy becomes thick.
10. Add coconut paste mix well and cook for 2-3 minutes, off flame.

Serve warm with steamed rice or roti.

Scramble Eggs


How do you like your eggs? I like mine scramble for breakfast , well it's not that I make breakfast every day ;) that's why I like McDonald's Big Breakfast only for the scramble eggs and whenever I get a chance I go McD for their big breakfast.  

Scramble egg one of easy and quick thing to make that you might wonder why am posting ...but long back when I fall in love with McD scramble eggs I didn't knew how to prepare that ! And I  thought perhaps there will be few blessed souls like me and wondering how to make scramble egg so here comes the recipe.  

We can do lot of variation with scrambled egg and here am posting the most basic one.


Serves ~ 2 
Ingredients:
Egg  - 3
Butter/Oil - 1 tsp
Freshly grounded Pepper - To Taste
Salt - To Taste 
Milk - 2 tbsp [optional, I didn't use]



Method:

1. Break and whisk eggs in a bowl until little fluffy or egg white and yolk blends well.  
~ If using milk add the milk and whisk the mixture.

2. In a pan heat butter/oil and add beaten egg, cook on medium heat 2  minutes or until they starts to set.

3.  Now stir the mixture to make it scramble using a whisk, folk or spatula.  [Whisk works just fine.]
~ Add salt now or you can add later, I added salt so it's combine well.

4. Cook until the consistency you want, or for a minute or 2 is enough.

Season with pepper and salt (if salt is not added before) and server hot/warm with toast and tea/coffee.  A simple breakfast ready in less than 10 minutes ..isn't it wonderful?

Egg Drumstick Curry

oday's recipe is egg drumstick curry made by my sis on one of the Sunday. Simple, easy to prepare and yummy to eat. Here goes the recipe:

Ingredients:

Egg - 5 number
Drumstick - 1
Sword Bean. Sem ki phalli - few (optional)
Onion - 2 big
Tomato - 1 big
Green Chilli - 5-6
Redchilli powder - 2tps
Turmeric - 1/2 tps
Coriander powder - 1tps
Curry leaves - few
Mustard Seeds - 1/2 tps
Ginger-garlic paste - 2tps
Oil - 3tbs
Salt - to taste
Water - 1 cup and to boil

Methood:

1. Boil egg and remove the shell.
2. Cut drumstick in medium size and boil.
3. Cut sword beans in medium size, chopped onion, tomato, green chilli and keep aside.
4. In a pan heat oil and shallow fry the egg until golden brown, keep them aside.
5. In the same pan add mustard seeds and let it splutters.
6. Add onion, ginger-garlic paste, green chilli, curry leaves mix everything and saute the onion.
7. Add the sword beans, drumstick, chopped tomato and cook for 1-2mins.
8. Now add all the powder masala, mix well and cook until sword beans becomes tender.
9. Add the egg and cook for 2mins.
10. Add salt and water. Bring it to boil and cook for another 4-5mins.

Egg Drumstick curry is ready to server with rice
