Okra (Bhindi) Recipes | Ladies Finger Recipes

Okra, Ladies' Finger, Bhindi, Vendakkai, Bendakaya, bamia, and many other names it's known by it's popular vegetable in most of the Indian house hold and we can make various dishes from okra or bhindi as you can see from below list. I have complied recipes of Okra/bhindi that I have blogged so far and will be adding more when I post something few. If you like bhindi and want to try different recipes then this list might be useful for you.

Vendakkai Sambar | Okra Sambar Recipe

Vendakkai Sambar, Ladies Finger Sambar or Okra Sambar whatever we may like to call this vendakkai sambar is one of my favorite and I actually like this more than murungakkai (drumstick) sambar.  Okra goes so well with tangy flavored sambar making it perfect side dish with steamed rice and I do try this make this regularly. If you like sambar and ladies finger (bhindi) then you will love this sambar too, it's easy to prepare and taste just yum.

Vendakkai Mor Kuzhambu or moor kulambu is mildly spiced yogurt base South Indian curry, mostly served with steamed rice as side. Mor kuzhambu made with variety of vegetables, fritters and the base curry or gravy recipes remains same with little variations. Mor kuzhambu is like answer to North Indian Kadhi and it's also curd base and chana dal is used instead of besan, both do taste little similar too.

This is easy Okra curry (bhindi sabzi) that goes well with steamed rice, simple pulao or roti/paratha.  Tangy,  rich, creamy and yummy dahi bhindi is real treat to eat.

Bhindi Raita or Vendakka Thayir Pachadi or Okra Spiced Yogurt Dip is one of easy raita or accompaniment recipe perfect with Biryani, Pulao or Variety Rice. Vendakkai pachadi or bhindi raita is good variations from usual raita recipe with crispy fried okra/bhindi, chilled yogurt and with tempering or tadka it's taste wonderful. Besanwali Bhindi Sabzi is similar to bharwa bhindi in this we just don't stuff okra but rather cook the masala or chickpeas flour mixture along with okra/bhindi.  You can say it's easy version of bharwa bhindi as it's taste something similar and we don't have to do the stuffing part making it easy and quick. When I don't have much time in hand or just want to try something for a change then I make this bhindi sabzi with besan (chickpeas flour).

Bharwa Bhindi | Gujarati Bhinda Sambhariya | Okra Recipes


Gujurati Sambhariya Bhindi RecipeBharwa Bhindi means mostly is stuffing with chickpeas flour/besan but here in Gujurati Sambhariya Bhindi stuffing is made of coconut, peanuts and spices. It's a great change from usual okra recipes or even from stuffing okra, a very good combination with paratha/roti or even with rice.  It can be done in jiffy other than the okra cutting and stuffing part.  For this sambhariya recipe try to use fresh tender small lady's fingers if not use tender long ones and cut in half for stuffing.  

Punjabi Bhindi Masala Recipe | Okra Recipes


Bhindi Masala is one recipe that I do often other than aloo bhindi bhujiya and it's goes so well with roti/paratha or poori is big plus point.  Recently I started doing it Punjabi way of this with addition of few more extra spices and the result is just better. This is a perfect lunch box recipe if you do parallel work then the preparation time will be less as I normally do.  You can make this as side dish with dal/sambar or even rasam doesn't have to be only with paratha, I also eat this with plain steamed rice, it's just me.  Don't miss the kasoori methi in any case, that's add that extra zing to this simple curry that once you try it you will love it. 

Sindhi Kadhi | Kadhi Chawal |No Onion No Garlic Recipe


In Sindhi cuisine one of famous dish is Sindhi Kadhi, at least I think so! I had first time sindhi kadhi in Kailash Parbat during my friend's birthday lunch meet (this was almost a year and half ago) and I didn't liked it cause they made it just plain bad.  But since my friend was going ga-ga over her neighbor aunt famous sindhi kadhi and how good actually it suppose to be I thought of trying and I have also heard only good things about it.   What makes Sindhi Kadhi unique is no curd(yogurt) is used which is a key ingredient in any kadhi and on the other hand vegetables are added which normally doesn't happens in kadhi so it's very different from any other popular kadhi.

Shahi Bhindi Recipe | Okra In Creamy Cashew Sauce


This Shahi Bhindi recipe is from my sister and it's one of her hit recipe.  It's a perfect recipe for any get-together or party, fried okra in creamy cashew sauce does wonder and never fails to impress people, it's finger licking good trust me when I say that.  Pair it with any paratha or poori and your simple meal can be a grand affair.


If you are bored of your usual paneer butter masala, Chole, Navratan Korma, Mix Vegetable Kurma etc then try this simple, quick and delicious shahi bhindi and wow your family, friends & guests.  Since Holi is approaching I thought it's right time to post this recipe which you can try for your Holi parties, also after posting my homemade kitchen king masala recipe lot of people asked me to post recipes using kitchen king, so this shahi bhindi is one of those recipes.  But incase you don't have kitchen king with you and you are not making one too then replace it with garam masala.


Ingredients for Shahi Bhindi 

[Serves 3-4]

Okra/Bhindi - 300 gms or 2 Cups
Onion - 2 Large
Tomato - 1 Large
Red Chilli Powder - 1 tsp
Turmeric Powder - 1/2 tsp
Kitchen King Masala - 1 tsp {or garam masala 1 tsp}
Kasoori Methi - 1/2 tbsp
Salt - To Taste
Oil - 3 tbsp
Cumin Seeds/Jeera - 1 tsp
Ginger-Garlic Paste - 1/2 tbsp
Water - 1 Cup
Cilantro - 2 tbsp [chopped]

To Grind
Whole Cashew nuts - 15
White Sesame Seeds - 1 tbsp
Fennel Seeds - 1 tsp



Method:

1. Soak Cashew in little water for 15 minutes and grind together with sesame and fennel seeds into smooth paste, keep aside.

2. Wash bhindi/Okra pat dry well and cut both ends of okra, cut into 2" pieces.
3. Finely chop onion, tomato, cilantro.
4. In a pan heat 1 tbsp oil and fry okra until golden brown, keep aside.

5. In the same pan add remaining oil and add cumin seeds, allow to splutter.
6. Add onion and saute for a minute. Now add ginger-garlic paste, little salt and cook until onion becomes soft.
7. Add chilli, turmeric and kitchen king powder along with crushed kasoori methi, mix well and cook for a minute.

8. Add tomato, salt stir cover and cook until tomato gets mashed.

9. Add fried okra/bhindi and mix well to coat okra with masala. Add cashew paste.

10. Mix well and cook for 2 minutes.  Add 1 cup water, mix gently.

11. Adjust salt if required, keep flame to slow and simmer for 3-4 minutes or until oil will float on top.  Garnish with cilantro and off flame.

Serve warm with paratha/poori or pualo.


Notes ~

  • This Shahi Bhindi will get thicken fast so serve it warm or if using it later add little water and warm it again.  
  • You can replace kitchen king masala with garam masala.

Aloo Bhindi Bhujiya (Fry) | How to make Aloo Bhindi Sabzi | Side dish for Paratha

Aloo Bhindi Bhujiya, aloo bhindi fry, sukke aloo bhindi or aloo bhindi sabzi whatever we may call it but this is one of the best bhindi (okra) recipe. It's our family favourite and if anything that we love with bhindi then that is this bhindi aloo fry from childhood. This simple side dish use to be our regular lunch box along with ajwain paratha. It's very simple and easy and pleases kids very well.

Okra Fry & Cucumber Salad

his Bindi/Okra fry is very simple and fast recipe and made for varat or chu masa. This one is made by my sis.

Ingredients:

Okra - 300gms
Cumin Seeds - 1/2 tps
Dry red chilli - 3-4
Salt - to taste
Oil - 3 tbs

Method:

1. Wash the chop the okra in small pieces.
2. Heat oil in a pan, add cumin seeds and allow it to splutter.
3. Add the red chilli and fry until they turn golden brown.
4. Add the okra now and fry until it turns soft and cook. Do not over fry, the okra needs to have little raw flavor.
5. Add salt, mix well and cook for 2 more mins and Okra fry is ready.


Now coming over to Cucumber Salad, this one is done by my sweet nephew Kedar. Cutting, arranging, garnishing everything is his work :)

So here it is, wash and peel the cucumber and cut in round slices. Arrange in severing dish, add salt, pepper powder. Cucumber salad is ready to munch.
