Poha is regular breakfast at my place some times I make it every day so I do lot of experiment with poha and this paneer poha is one such trial, I have no idea if there is any authentic paneer poha recipe but this is my version and it's good.  Now I make this paneer poha regularly it works great as a breakfast or snack specially if having guest at home then it's kinda different from regular kanda or batata poha.
To make it more rich and appealing I add cashews instead of usual peanuts and it's works like a charm.  If you get bored of regular poha then you should try this paneer kanda poha for a change, I am sure you will love this too.  If you want to make it more on heavy side then add potato or even carrot or any vegetable of your choice.  I sliced the paneer in small pieces so it's easy to bite you can keep the size you prefer.  This one is good for kids or as a lunch box, pair it up with a tea or juice and you are done.

Ready in less than 15 minutes, for me I do poha in less than 10 minutes as I do multi-tasking while I get the wok getting heated chop onion, while onion gets sauted I will chop paneer or potato and while that's gets cooked I will rinse and get the poha ready, on other side tea will be getting boiled too so a very quick breakfast always, sharing with you as a tip :)

Ingredients:
Poha/Thick Beaten Rice - 2 Cups
Chopped Paneer - 1/2 Cup
Onion - 1 [large]
Green Chillies- 2
Halved Cashewnuts - 12-15
Oil - 1 tbsp
Cumin Seeds - 1/2 tsp
Curry Leavse - A Sprig
Turmeric Powder - 1/2 tsp
Salt - To Taste
Fresh Crushed Peppercorns- 1/4 tsp [optional]
Lemon Juice - 1/2 tbsp
Sugar - 1/2 tsp
Chopped Cilantro - 2 tbsp


Paneer Kanda Poha Recipe

Method:

1. Finely chop onion, green chilli, cilantro and slice paneer into 1/4" or 1/2"pieces as you prefer.
2. In a wok heat oil, add cumin seeds and allow to splutter. Add onion, green chilli, curry leaves and saute for a minute.   Add halved cashews mix and cook until onion becomes soft.

3. Add paneer pieces and saute until paneer becomes golden brown around 2 minutes in medium flame.

4.Meanwhile rinse poha in a coriandar and keep aside, don't let it stand for long time otherwise it will get mashed. So I do this just before I need to add poha.
5. Add turmeric powder, salt and mix again.

6. Add poha and mix well, add crushed pepper, sugar, lemon juice and mix well to combine everything and cook for a minute.  Off flame and garnish with cilantro

Serve hot with tea/coffee or juice and enjoy paneer poha.
