Homemade Raw Banana Chips, Kachche Kele Ke Chips, Vazhakkai chips also known as Kerala Banana Chips is super easy chips to make at home, easier than potato chips and it's very quick too. Kela chips is also good for Navratri fasting or vrat as raw banana is allowed in fasting so it's great option for snack. Perfect with a cup of tea or coffee or serve as a side dish with bisi bela bath, sambar sadam, puliyogare etc too it's works wonderfully.

I made this chips with fasting rule so used rock salt (sendha namak) and pepper very less but if you are not making this during fasting days then you can add regular salt and also red chili powder instead of pepper or both, option is yours. banana chips are always better than store brought potato chips and it's also vegan, it's also so easy to do try it.

There is only one problem with these chips that they disappear so fast :) these are really additive. Kerala banana chips are very famous and of course they they taste so yum, this is almost similar to that only thing is we didn't use turmeric. Whether fasting or not try these chips.  You might also like other raw banana recipes like Kela Ka Kofta Curry, Andhra style raw banana stir fry, Vazhakkai Kara Kuzhambu, Vazhakkai Varural (stir fry).

Ingredients:

  • 2 - Raw Banana/Kela/Vazhakkai
  • 2-3 Cups - Water
  • For Deep Frying - Oil
  • To Taste - Fresh Pepper Powder
  • To Taste - Sendha Namak or Salt

Method:

  1. Keep water in a large bowl, peel banana and using a mandoline slicer, slice banana over bowl of water so the banana slices fall on water bowl, do this for all the banana.
  2. Heat Oil in a wok/kadai for deep frying, take out banana slices from water and pat dry from kitchen tissue, dry again one more time in kitchen towel to make sure no water is left. OR you can avoid this step and directly hold mandoline slicer over oil and slice banana, just be careful while doing this to not to drop the slicer on oil and to get burnt.

  4. Once the oil is hot drop few slices of banana in to oil and fry over medium heat, do not over crowd the kadai. Use a slotted spoon/ladle to stir chips in intervals so they doesn't get stick together.
  5. Oil bubbles will start to reduce and banana slices will change color and becomes cripsy, once almost all the bubbles disappears and ‘sshhh’ sound ceases completely, drain oil and remove chips from oil, keep in kitchen tissue to remove excess oil. Repeat same for rest. Once all the chips gets cooked, sprinkle pepper and sendha namak if making this for fasting, if not add regular salt and you can also add chili powder.
